How To Prepare
This is probably the best way to meal prep. This Buddha bowl offers a variety of combination and can be mixed and matched as wished. For this version cook some quinoa or couscous and set aside. In the meantime peel your sweet potatoes season them well and put them in the oven to get soft in the inside and crispy on the outside. If you wish you can add some additional veggies to the potatoes and roast them as well. While everything cooks or roast cut up some more fresh veggies (optimally, radish or some cucumber) and prepare your dressing, which consists of only a dash of tahini, fresh lemon juice and some salt. Assemble your bowl as your heart desires, layering it with Quinoa, veggies and the dressing.
