Ingredients
  • 1 Onion and 1-2 cloves of garlic
  • 2 tbsp tomato paste
  • Canned and cubed tomato sauce
  • Choose between vegetable stock or coconut milk
  • Spices: salt, pepper, curry
  • 80 grams red lentils
  • 150 grams white rice, or any rice of your choice
  • Toppings: cilantro, sour cream

How To Prepare

When the weather gets colder, meals get warmer – this hearty red lentil curry will warm you from the inside. Start by washing your red lentils and set them aside. Finely chop your onion and garlic into cubes. Heat up your pan with olive oil and sauté first the onions for 4-5 minutes, then add the garlic and sauté for 2 more minutes. Now it’s time to let the flavours bloom: add your lentils, tomato paste and your spices and let everything roast for a few minutes. Now add the canned tomatoes, choose between vegetable stock and coconut oil and let everything simmer for 15 minutes until the lentils spread and reach a thick and creamy consistency. Serve with white basmati or jasmine rice and top with cilantro and sourc cream.
