- Pasta of your choice
- 1 onion
- 3 cloves of garlic
- 2 tbsp tomato paste
- Yogurt
- Spices: salt, pepper, paprika, cumin, chili flakes
- Minced soy (or regular minced beef)
- Others: Chili oil, parsley, cherry tomatoes
How To Prepare
This dish is exactly what you will be needing in case you forgot to take out the meat out of the fridge before you left the house in the morning. Quickly soak your minced soy in vegetable stock and in the meantime get started in chopping up your onion and garlic. Sauté that in a pan with olive oil, add your minced soy an tomato paste and season to taste – then add a little splash of water (optimal would be pasta water) and the canned tomatoes. Let everything simmer for 10 minutes and cook your pasta in the meantime. Assemble your bowl with the cooked pasta add yogurt and the minced soy “bolognese” and lastly garnish with chili oil and parsley.
