Ingredients
  • Protein source: kidney beans or regular beef
  • Small tortillas
  • 1 Onion
  • 1 tbsp tomato paste
  • Shredded cheese
  • For the sauce: a handful parsley/ cilantro, sour cream and lime

How To Prepare

For this quick and delicious tacos you simply sauté a chopped onion in a pan, add the tomato paste, your preferred spices and a splash of water. Adding in your kidney beans (or minced beef) and slightly mashing them. Throw together the parsley or cilantro into a mixer, add the sour cream and a splash of freshly squeezed lime juice and mix well together. Preheat your oven at 160°C at top and bottom heat. Layer your baby tortillas with the filling and add a good amount of shredded cheese on top. Bake for 10 minutes and then enjoy with the fresh dip.
